Greetings from the Rumi Bakehouse family, and thank you for stopping by.
Like so many others, our journey began with a simple desire: to eat healthier. Nutritionists often advise cutting bread out entirely - but for those who truly love it, that solution never felt right.
What began as a necessity soon grew into a purpose: to bake the healthiest version of bread possible - one that protects our family from the hidden harms of modern bread and restores daily bread to something genuinely nourishing.
So why has bread become something people feel they must give up? For most of us, the problem isn’t wheat itself, but what has been done to it. Once wheat is stripped, bleached, and heavily altered, it loses the vital nutrients our bodies were meant to receive and can instead become harmful.
This led us to a simple but powerful question: what if wheat were used in its original form - whole, organic, and complete? While this approach is more challenging and costly, thanks to those who paved the way before us, a truly nourishing product is possible. Careful sourcing, sorting, and preparation lay the foundation. The final challenge is addressing phytic acid, a naturally occurring compound in grains that the human body cannot break down on its own. Without this step, much of wheat’s nutrition remains inaccessible.
That is why grains must be soaked, sprouted, or fermented - these methods return them to their nourishing state. We chose fermentation, honoring ancient traditions. Each batch of sourdough is given time to rest, allowing wild bacteria to gently transform the dough. No shortcuts. No rush. Just patience, as it has been practiced for generations.
With whole grains revived, we fold in nourishing seeds, olive oil, and a small amount of high-quality salt, returning bread to its simplest and most wholesome form.
Our cookies follow the same philosophy, inspired by ancient Mesopotamian recipes. Naturally sweetened with dates and enriched with nuts and fruits, they are rich in flavor, deeply satisfying, and made to nourish.
After seeing and feeling the health changes firsthand, one thing became clear: this work matters. This is not a trend - it is a return to wisdom, a return to food made to truly care for you. May each bite of our bread and cookies nourish not only the body, but also the spirit, with benefits that unfold over time.
Rumi Bakehouse was founded by three Yousif families coming together around this shared purpose.
