What Does Your Signature Flour Mix Contain?
Discover the exceptional quality of our products, crafted with our signature blend of organic whole red wheat and organic ancient grains, including
Kamut, Einkorn, and Spelt, along with Barley or Rye.
This carefully balanced blend is portioned to support optimal nourishment and reflects the natural proportions of each grain. By combining whole grains and ancient grains, it offers a more balanced gluten profile while maximizing nutritional value. Every product is naturally fermented using our aged sourdough starter.

What Are the Materials and Baking Environment Like?
We use only natural, food-grade materials throughout our storage and baking process. Dough is prepared on natural marble surfaces, and our sourdough starters are stored in glass. Stainless steel and food-grade bamboo tools are used at every stage. If plastic must be used, it is strictly food-grade and limited to very short-term contact.
All surfaces are cleaned with non-toxic products, and we bake exclusively in electric ovens to avoid exposure to gas fumes or open flames, ensuring a clean and safe baking environment.

How Can Baked Goods Without Preservatives Be Preserved?
Baked goods without preservatives are susceptible to staling and microbial growth. To maximize shelf life and maintain taste, we recommend that customers keep their baked goods frozen:
Freezing (1–3 months): Freeze fully cooled products in airtight, freezer-safe packaging. Thaw at room temperature or reheat briefly to restore texture.
Scientific Basis:
-
Airtight packaging reduces water activity and microbial contamination.
-
Low temperatures slow enzymatic reactions and microbial proliferation.
-
Freezing halts microbial growth by reducing water availability and enzymatic activity.
Before consumption, please inspect baked goods for any unusual odors, discoloration, or signs of mold. Improper freezing or storage may affect product quality and shelf life. Thank you!
