Who We Are and Why We Do It

Greetings from the Rumi Bakehouse family, and thank you for stopping by.

We are a homegrown kitchen built on shared roots, collective hands, and a deep love for feeding others. 

What began as an act of survival-baking to protect a family from the hidden harms in everyday food -has grown into a mission: a wake-up call to take food seriously.

Like so many others, our journey began with a simple desire to eat healthier. Doctors advised giving up bread-but for those who love it, that was far from easy. What began as a necessity soon ignited a mission: to transform daily bread into something truly nourishing.

For most of us, the problem isn’t wheat itself, but what has been done to it. Once stripped, bleached, and altered, it loses the natural balance and vital nutrients our bodies were meant to receive.
 
The goal became clear: what if wheat could be used in its original form- whole, organic, and complete? Although this approach is more challenging and costly, thanks to those who paved the way, a truly healthy product is within reach. Sorting, careful selection, and preparation set the stage-the final challenge is breaking down phytic acid, a naturally occurring substance in the grain that our bodies cannot process on their own. Without this crucial step, the full nourishment of wheat remains out of reach.

That’s why grains must be soaked, sprouted, or fermented-it’s the only way to return them to their original, nourishing form.
We chose fermentation, honoring ancient methods. Each batch of sourdough is given time to rest-allowing wild bacteria to gently transform the dough. No shortcuts. No rush. Just pure, old-world patience.

With whole grains revived, we fold in nourishing seeds, olive oil, and a tiny sprinkle of quality salt, returning bread to its simplest and most wholesome form.
 
Our cookies follow the same ancient wisdom, drawing inspiration from Mesopotamian recipes. They’re naturally sweetened with dates and enriched with nuts and fruits-rich in flavor, naturally sweet, and deeply satisfying.

After seeing and feeling the changes in health firsthand, it became clear: this is essential. This isn’t a trend-it is a return to wisdom. A return to food that loves you back. May each bite of our bread and cookies nourish not just the body, but also the spirit, with benefits that unfold over time. Three families of the Yousif come together to start this job
